toni_smithEven gourmet chefs occasionally like to take the night off. Working moms, stay at home moms and single ladies are no different. While takeout food can be quick and easy, it isn’t always the healthiest choice.

Try these recipes, inspired by the takeout menus that litter the kitchen “junk” drawer, for a healthy alternative to some of your favorite meals.

Chicken Lo Mein
Bored with rice?  Change things up a bit and use noodles to make your “takeout” delicious.

Ingredients:

  • Spaghetti Noodles (approximately 1 pound), cooked to package directions
  • 1-2 pounds Chicken breast, diced
  • ½ cup bean sprouts
  • 1 cup snap peas
  • 1 cup broccoli
  • 1 cup chopped carrots
  • 1 cup baby corn
  • sesame Oil
  • soy sauce (approximately one-half cup)

Directions:
Using a wok or a large, deep skillet, heat enough sesame oil to coat the bottom. Add chicken and cook till done. Add vegetables and soy sauce. Cook for approximately 10 more minutes, stirring occasionally. Toss mixture with spaghetti and sesame oil.

TIPS:
•    There are different sizes of noodles available, but don’t go too small. You want a thick noodle to hold the sesame oil.
•    Make this dish vegetarian by using tofu instead of chicken.
•    Feeling adventurous? Add some ginger to the mixture before cooking.

Toni’s “Foundation Smashers”
Modeled after a local chain-restaurant’s signature burrito, this dish lets you choose your own healthy ingredients and the way they are prepared.

Ingredients:

  • Pork loin, between 1 one-half and 2 pounds
  • 2 bottles BBQ sauce
  • 1 medium onion, chopped
  • 10 inch (burrito sized) tortillas
  • 1 can black beans
  • Shredded cheese
  • 1 can diced tomatoes
  • Shredded lettuce

Directions:
In a crock pot, simmer the pork loin and onions in BBQ sauce for 6-8 hours on low.  Remove loin and shred pork. Warm the tortilla in a pan. Place all ingredients into the tortilla and roll.

TIPS:
•    Chicken works just as well for this dish.
•    Substitute your favorite veggies for any of the veggies in this dish. Get creative and try sautéed onions and peppers or mushrooms.
•    Make sure to use the larger sized tortillas, otherwise you won’t have enough room to create your masterpiece and still roll to close.

NOTE: The pork loin used in this recipe will make at least two meals for 4-6 people.

Big Beef “Angus” Burgers
“Angus” is what we call our youngest son. He’s a big guy, but not as big as these burgers.

Ingredients:

  • 2 pounds ground beef
  • 2-3 cups barbecue sauce
  • 1 cup bread crumbs
  • One-half medium onion, diced
  • 1-2 teaspoons cumin
  • 1 egg
  • 8-10 slices bacon
  • Sliced cheese
  • Sliced tomato
  • Lettuce leaves
  • Buns

Directions:
Combine all ingredients (beef through egg) in a large bowl and mix. Form patties approximately the size of your palm. Grill to desired doneness. Place burger on a thick bun and top with cheese, bacon, lettuce and tomato.

TIPS:
•    You should be able to get 6-8 burgers out of the mixture, more if you make burgers that are not too thick.
•    I recommend using low fat ground beef, around 85 percent lean. And keep in mind, the leaner the meat, the more money you’ll spend.
•    Make sure to spray down your grill with a cooking spray to ease the burgers off the rack.
